One-Minute Microwave Mug Cake

     Earlier this evening I was craving something sweet. I was specifically in the mood for cookies of some kind but to be honest, I didn’t want to put in the effort to make a whole batch. So I whipped up this chocolate chip mug cake instead. Now, full disclaimer, it’s not as good as fresh, oven baked, chocolate chip cookies, but it definitely satisfied my craving and it was super fast and easy. I will definitely be making it again sometime.

One-Minute Microwave Mug Cake

Ingredients

  • 4 tbsp all-purpose flour
  • 2 tbsp packed brown sugar
  • 1/4 tsp baking powder
  • 1/8 tsp vanilla
  • 3 tbsp milk (can substitute unsweetened non-dairy if desired)
  • 1/2 tbsp oil (I used grapeseed but any vegetable oil works)
  • approx 2 tbsp chocolate chips(divided)

Instructions

Add all ingredients except for chocolate chips into a microwave safe mug (I used n 11 oz mug but an 8 oz mug should work). Mix well with a fork, breaking up larger lumps. Stir in about half of the chocolate chips and then sprinkle the rest of the chocolate chips on top of the batter. Cook in microwave on full power for 1 minute. Leave it sit in the microwave for a few minutes to cool slightly. Enjoy!

    Oh this sounds really good! I have never made cake in a mug but would love to give it a try! My only worry is that this would be too easy to make and become a daily late night snack, which is not good even if it tastes so good.
